Tambaqui no Forno

A delicious preparation - straight from the kitchens of Rock View Lodge!

Ingredients
- 2kg tambaqui
- 1kg potatoes
- 2 large onions
- 1 large sweet pepper
- shallots & cilantro
- salt
- garlic
- lime
Instructions
- Separate the fish into its two halves, season them well with salt, garlic and lime
- Place in the baking pan (if possible in metal) with the inside of the fish below
- Make fine cuts across the fish to allow the seasoning to enter the fish better
- Place a little of the green seasoning on top of the fish and cover with aluminum foil
- Light the oven so that it is already hot and bake the fish for half an hour
- While the fish is baking boil the potatoes in large pieces in water with salt to taste
- Remove the baking pan with the fish and place the potatoes around the fish
- Place the onion and sweet pepper cut up in rings on top of the fish and potatoes and then place the green seasoning on top
- Pour a little olive oil on top and place back the baking pan in the oven for a further 30 to 45 minutes until golden
- Serve with plain rice (cooked the Brazilian way w/ garlic)
