Tambaqui no Forno

Ingredients
  1. 2kg tambaqui
  2. 1kg potatoes
  3. 2 large onions
  4. 1 large sweet pepper
  5. shallots & cilantro
  6. salt
  7. garlic
  8. lime
Instructions
  1. Separate the fish into its two halves, season them well with salt, garlic and lime
  2. Place in the baking pan (if possible in metal) with the inside of the fish below
  3. Make fine cuts across the fish to allow the seasoning to enter the fish better
  4. Place a little of the green seasoning on top of the fish and cover with aluminum foil
  5. Light the oven so that it is already hot and bake the fish for half an hour
  6. While the fish is baking boil the potatoes in large pieces in water with salt to taste
  7. Remove the baking pan with the fish and place the potatoes around the fish
  8. Place the onion and sweet pepper cut up in rings on top of the fish and potatoes and then place the green seasoning on top
  9. Pour a little olive oil on top and place back the baking pan in the oven for a further 30 to 45 minutes until golden
  10. Serve with plain rice (cooked the Brazilian way w/ garlic)
